For a Fun Sunday Brunch or anytime!!


Sunday brunch is a must at our house. Family, friends, or whomever is around shares in our late morning meal. We usually indulge in the typical breakfast fare of pancakes or waffles, eggs, potatoes... But for a not so typical entree try a breakfast loaf! A medley of yummy ingredients bursting with flavor! 

1 medium round loaf bread, sourdough, french, whole grain...
6-8 eggs scrambled and cooked
salt and pepper to taste
3/4 cup shredded cheese of your choice
1 lb of cooked bacon, chipped ham or cooked sausage
1 thinly sliced tomato
1/4 cup thinly sliced onion, red and green pepper
several sprinkles of tabasco, or 1/4 cup salsa - optional

Cut top fourth off top of bread round. Hollow out center and top leaving 1/4" crust. Add 1/4 cup shredded cheese to bottom. Layer with eggs and meat then cheese again. Drizzle tabasco or salsa between layers. When bread round is filled add sliced onion, tomatoes and peppers on top, sprinkle more cheese and replace bread top. Gently press layers together. Tent foil over top. Bake on greased baking sheet in 350 degree oven for 20-25 minutes. Remove from oven, let sit for 5 minutes before cutting.
