A Recipe to Enjoy All Year!


A New Years Resolution

My New Years Resolution was to get my recipes in order! For years I've had a folder that housed dozens of looseleaf recipes. Some old, some new. Some scribbled on paper, others printed, most faded and crinkled. Not to mention, they were in no particular order.

So, I decided 2015 was the year. As I pondered the best way to carry out my plan, I came across a recipe keeper binder, complete with divider tabs, cooking tips and an index! One morning I retyped or copied my recipes, slipped into plastic page savers and added them to my binder. No more jumbled mess! What an energizing accomplishment!!

Now I can easily flip through and find the perfect recipe. And here's a great one I'd like to share. 
Awesome Crumb Coffee Cake
·       
·         2 cups all-purpose flour
·         1 cup + 2 tablespoons granulated sugar
·         1 teaspoon salt
·         10 Tablespoons (1 and 1/4 stick) unsalted butter, lightly softened (still cool to touch)
·         1 teaspoon baking powder
·         1/2 teaspoon baking soda
·         3/4 cup buttermilk, room temperature
·         1 large egg, room temperature
·         2 teaspoons vanilla extract
·         1 1/3 cup brown sugar
·        4 teaspoons ground cinnamon
      Vanilla Icing

Directions: Preheat oven to 350 degrees. Spray a 9-inch springform pan or grease with butter. Whisk the flour, sugar, and salt together in a large mixing bowl until combined. Cut in the butter in very small pieces. Whisk around with a whisk or mix with a fork until the mixture resembles coarse crumbs. Set aside 1 cup of the flour mixture and add the brown sugar and cinnamon.
Mix baking powder and baking soda into the remaining flour mixture. Add buttermilk, egg, and vanilla beat with a mixer. The batter is very, very thick. Vigorously mix everything together until the batter is smooth, fluffy, and resembles frosting — about 2 full minutes. Spoon 1/2 the batter into the prepared springform pan, smoothing the top.
Sprinkle 1/2 of the brown sugar and cinnamon mixture on top of batter. Add rest of batter and then sprinkle the rest crumbs over the batter, pressingly lightly so they stick. Bake the cake until the center is firm and a toothpick inserted in the center comes out clean, 50 to 58 minutes. Allow to cool for 10 minutes, then remove the sides of the springform pan. Drizzle with vanilla icing while warm and Enjoy!
